Citrus hystrix is a citrus fruit from the dense foliage and aromatic. The genus Citrus, the appellation "hystrix" is a direct reference to the numerous thorns on the branches of the tree.
Native to Southeast Asia, the kaffir lime is a perennial shrub and has aromatic foliage. Given its intense aroma, it is in fact an ingredient in various Thai and Vietnamese dishes.
The plant also produces green berries, whose bark looks heavily rippled. This part is used in cooking to flavor sauces and condiments.
